Butternut Squash Dilemma
A couple weeks ago I bought a butternut squash and sage with one mission--to make Butternut Squash Gnocchi with Sage Butter Sauce. I was so determined and nothing could have stop me. I would make it. But things happened. Things like laziness. A day passed by, and another day, and another. The butternut squash just sat pretty on my counter top. Then last week, I noticed that the Sage had turned grey and moldy. So, to trash it went. As for the butternut squash, it was waiting for me patiently on my counter top, waiting for me to make something good out of it.
I contemplated on making butternut squash soup or maybe pie, I am leaning towards the pie. But I don't have the ingredients required to make a pie. At the same time, I am still ambivalent about making a pie. Maybe I should just roast it. Or make mashed butternut squash. Those certainly are far more healthful than a pie. But… but a pie would taste so good. So, I decided to get started.
I peeled the butternut squash and took out the seeds. Now, looking at the cut butternut squash I am still wondering what should I make with it. Hmmm….

Onions/Shallots + Lemongrass + Red curry paste + Coconut milk + Hand blender = Awesome soup.
ReplyDeleteI'm not a big fan of pumpkin/winter squash in savory dishes. I prefer them in sweet dishes, this is something that I totally embraced when I moved here since winter squashes and cinnamons are synonymous with savory dishes growing up.

You boleh buat donut OR masak lemak labu :-)
Donut sounds like a good idea. Not a big fan of masak lemak labu though.
